Vegetable Egg Bake

Ingredients

  • 5 eggs
  • 1 large handful of spinach (chopped)
  • ½ bell pepper
  • ¼ cup mushrooms
  • ½ onion
  • 1 tbsp almond milk
  • 1 tsp hot sauce
  • 1/4 cup of shredded cheddar cheese
  • ¼ cup shredded mozzarella cheese
  • 1 tbsp olive oil
  • 1/2 tsp sea salt
  • ½ tsp black pepper

Instructions

  • Preheat oven to 350 degrees F
  • Grease a 9×9 baking dish or cake pan. You can also line with parchment paper to ensure nothing sticks to the pan!
  • Heat up a pan on the stove with 1 tbsp olive oil
  • Add in diced onions and let simmer for 5-10 minutes until they start to brown
  • Add in diced bell pepper, mushrooms, and spinach and cook for 10 minutes
  • In a mixing bowl, add your eggs and whisk!
  • Add in almond milk, hot sauce, cheese, and salt and pepper
  • Take your veggie mixture from the stove and pour it into the greased baking dish
  • Now pour your egg mixture on top of the veggies
  • Bake 25-30 minutes and slice into 4 pieces
