Ingredients
- 5 eggs
- 1 large handful of spinach (chopped)
- ½ bell pepper
- ¼ cup mushrooms
- ½ onion
- 1 tbsp almond milk
- 1 tsp hot sauce
- 1/4 cup of shredded cheddar cheese
- ¼ cup shredded mozzarella cheese
- 1 tbsp olive oil
- 1/2 tsp sea salt
- ½ tsp black pepper
Instructions
- Preheat oven to 350 degrees F
- Grease a 9×9 baking dish or cake pan. You can also line with parchment paper to ensure nothing sticks to the pan!
- Heat up a pan on the stove with 1 tbsp olive oil
- Add in diced onions and let simmer for 5-10 minutes until they start to brown
- Add in diced bell pepper, mushrooms, and spinach and cook for 10 minutes
- In a mixing bowl, add your eggs and whisk!
- Add in almond milk, hot sauce, cheese, and salt and pepper
- Take your veggie mixture from the stove and pour it into the greased baking dish
- Now pour your egg mixture on top of the veggies
- Bake 25-30 minutes and slice into 4 pieces
