Turkey Mac

Ingredients

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 garlic clove (minced)
  • ½ cup peas or green beans
  • ½ diced onion
  • ¾ cup pasta shells or elbow macaroni
  • ½ cup almond milk or regular milk
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp coconut sugar (brown sugar works too)
  • 1 tsp hot sauce
  • ½ cup diced tomatoes
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp cumin
  • ½ tsp paprika
  • ½ tsp thyme
  • ¼ tsp turmeric

Instructions

  • Add 6 cups of water in a large pot on the stove and turn on high heat with a pinch of salt
  • When water is boiling, add pasta shells and cook for 8 minutes until tender
  • Meanwhile, heat a cast iron skillet on another burner and add 1 tbsp olive oil
  • Add the diced onion to the pan and brown for 10 minutes
  • When the noodles finish cooking, drain the pasta and rinse with cold water and set aside
  • Now add the ground turkey and minced garlic to the cast iron skillet and cook for 10 more minutes
  • Once the turkey is almost all the way brown, add the peas, hot sauce, coconut sugar, diced tomatoes, and spices and simmer for 10 minutes
  • Return your pasta back to the large pot  (burner off) and add the cheese and almond milk and heat on low until the cheese is melted and forms a thick sauce. Add the turkey to the macaroni and mix well
  • Ready to serve!
