Stuffed Mushrooms

Ingredients

  • 6 white mushrooms
  • ½ bell pepper
  • Olive oil
  • ¼ of an onion (diced)
  • 1 garlic clove (minced)
  • ¼ tsp salt and ¼ tsp pepper
  • 1 large handful of spinach (finely chopped)
  • ½ cup shredded parmesan cheese
  • ¼ cup bread crumbs

Instructions

  • Preheat the oven to 400 degrees F and line a baking sheet with parchment paper
  • Slice the stems off the mushrooms. After slicing, spoon out the center of the mushroom so that the caps are ready for stuffing
  • Heat a frying pan on the stove with 1 tbsp olive oil and add onions
  • As the pan becomes warmer, add bell pepper, spinach, and garlic
  • After about 10 minutes, remove the pan from the burner and begin to stuff each mushroom cap with 1 tbsp of veggie mixture and set aside
  • Mix together 1 tsp olive oil, breadcrumbs, and shredded cheese in a separate bowl
  • Add a pinch of salt and pepper to the stuffed mushrooms and top with a generous amount of breadcrumb and cheese mixture
  • Place in oven for 15 minutes and remove when golden brown!
