Ingredients
- 6 white mushrooms
- ½ bell pepper
- Olive oil
- ¼ of an onion (diced)
- 1 garlic clove (minced)
- ¼ tsp salt and ¼ tsp pepper
- 1 large handful of spinach (finely chopped)
- ½ cup shredded parmesan cheese
- ¼ cup bread crumbs
Instructions
- Preheat the oven to 400 degrees F and line a baking sheet with parchment paper
- Slice the stems off the mushrooms. After slicing, spoon out the center of the mushroom so that the caps are ready for stuffing
- Heat a frying pan on the stove with 1 tbsp olive oil and add onions
- As the pan becomes warmer, add bell pepper, spinach, and garlic
- After about 10 minutes, remove the pan from the burner and begin to stuff each mushroom cap with 1 tbsp of veggie mixture and set aside
- Mix together 1 tsp olive oil, breadcrumbs, and shredded cheese in a separate bowl
- Add a pinch of salt and pepper to the stuffed mushrooms and top with a generous amount of breadcrumb and cheese mixture
- Place in oven for 15 minutes and remove when golden brown!
