Simple Chickpea and Fruit Salad

Ingredients

  • 1 can garbanzo beans
  • 1 small peach (diced)
  • 1 small honey crisp apple (diced)
  • ½ yellow bell pepper (diced)
  • Juice from ½ of a lime
  • 1 tbsp olive oil
  • 1 tsp apple cider vinegar
  • ¼ cup trail mix
  • ½ tsp of salt and ½ tsp of pepper

Instructions

  • Drain and rinse your garbanzo beans and transfer to large mixing bowl
  • Add in diced peach, apple, and yellow bell pepper
  • Add in juice from lime, olive oil, apple cider vinegar, and salt and pepper and mix very well!
  • Add in ¼ cup trail mix, and/or dried fruit and continue to mix!
  • Serve as a side dish!
