Shakshuka for Two

Ingredients

  • 4 eggs
  • 1 can diced tomatoes
  • ¼ cup mushrooms
  • Olive oil
  • ½ orange bell pepper
  • ½ onion
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ tsp thyme
  • ¼ tsp cilantro
  • ¼ tsp cumin
  • 1 garlic clove

Instructions

  • Preheat your oven to 350 degrees F
  • Heat a cast iron skillet with olive oil and add diced onions
  • After onions start to brown, add your bell pepper, mushrooms, and garlic
  • Add your tomatoes and spices and simmer on high heat
  • When your sauce reaches a boil, reduce to medium heat and create four small circles inside the pan so that you have space for each egg
  • Crack each egg into its individual hole in the pan and turn the heat to a low simmer
  • Let simmer for 7 minutes and then place in oven for 5-7 minutes depending on how well done you prefer your eggs
