Ingredients
- 2 and ¼ cup rolled oats
- ¾ cup almond milk
- ¼ cup pumpkin puree
- 1 tsp vanilla extract
- ¼ cup maple syrup
- 1 tbsp honey
- 1 banana (mashed)
- 1 tsp brown sugar
- 1 egg
- 1 tsp baking powder
- 1/2 cup chocolate chips
- ½ tsp pumpkin pie spice
- ½ tsp cinnamon
- Optional toppings: sliced banana, berries, peanut butter, yogurt
Instructions
- Preheat oven to 350 degrees F
- In a mixing bowl combine almond milk, pumpkin, maple syrup, vanilla extract, honey, mashed banana, 1 egg and mix well
- Now add your dry ingredients to the mix: rolled oats, brown sugar, baking powder, cinnamon, pumpkin pie spice, and chocolate chips and stir thoroughly
- Prepare an 8 x 8 baking or cake pan and spray with non-stick spray or line with parchment paper and pour mixture into bowl
- Bake for 30-32 minutes and let cool before serving
- Slice into 6 squares and add any additional toppings!
- You can have this as breakfast, dessert, or a snack and can be enjoyed cold or hot (warm up in the microwave)
