Ingredients
- 1 lb beef stew meat (cut into cubes)
- 6 kosher hot dogs
- 2 hard boiled eggs
- ¼ cup black olives
- 1 cup water
- 1 lb frozen French fries
- 1 large red onion (chopped)
- 2 garlic cloves (minced)
- 2 tbsp tomato paste
- 1 large bell pepper
- 1 large tomato
- Fresh Parsley (4 sprigs chopped)
- 1 bottle of your favorite beer
- ½ tsp of hot sauce (optional)
- Salt, pepper, and cumin
- Olive oil
Instructions
- Pre-heat oven according to French fries packaging
- Heat 2 tbsp olive oil in a large cast iron skillet
- Brown the beef stew meat and chopped onion
- Slice the hot dogs diagonally and add them to the beef and onion and stir
- Place the French fries on a baking sheet in the oven and bake according to package
- Now add 2 tbsp tomato paste and 6 ounces of beer (half of a bottle) to the meat
- Sprinkle ¾ tsp of salt, ½ tsp of pepper, and ½ tsp of cumin over meat so it is evenly distributed
- Mince two garlic cloves and add to skillet and stir. Simmer for 7 minutes over medium low heat
- Slice bell pepper into thin strips and add to skillet
- Add 1 cup of water and cook over medium-high heat for 8-10 minutes
- Add 2 chopped parsley sprigs to skillet
- Now add the rest of the beer, hot sauce, and reduce over medium heat until sauce is thick.
- Finely mince the rest of the parsley sprigs and tomato and place in small bowl or sauce dish and sprinkle with a pinch of salt and pepper
- Assemble your dish: Plate the fries and beef and garnish with egg, olives, & tomato parsley salad.
