Serves 2-3
Ingredients
- 8 ounces orzo
- 12 raw jumbo shrimp
- 1 tbsp unsalted butter
- Black pepper to taste
- 1 tsp salt
- 1 1/2 tbsp olive oil
- Basil, marjoram, parsley
- Mozzarella or parmesan cheese
Instructions
- Boil 4 cups of water in a pot and add a ½ tsp of salt
- Once water is boiling, add 8 ounces of orzo and cook for 8-10 minutes
- Meanwhile, heat a separate pan on the stove and add 1 tbsp unsalted butter
- Once pan is hot, add shrimp and cook for 2-3 min, flipping half way. Set aside when shrimp are pink and cooked through
- Once orzo is cooked, drain the hot water and add a little bit of cold water so the orzo does not overcook
- Transfer drained orzo back into the pot so you can assemble your sauce
- Now add to orzo: 1 ½ tbsp olive oil , ½ tsp of salt, and shrimp
- Next add the remaining ingredients to taste: black pepper, basil, marjoram, parsley, and mozzarella or parmesan cheese
- Mix thoroughly and serve!
