Orzo with Shrimp

Serves 2-3

Ingredients

  • 8 ounces orzo
  • 12 raw jumbo shrimp
  • 1 tbsp unsalted butter
  • Black pepper to taste
  • 1 tsp salt
  • 1 1/2 tbsp olive oil
  • Basil, marjoram, parsley
  • Mozzarella or parmesan cheese

Instructions

  • Boil 4 cups of water in a pot and add a ½ tsp of salt
  • Once water is boiling, add 8 ounces of orzo and cook for 8-10 minutes
  • Meanwhile, heat a separate pan on the stove and add 1 tbsp unsalted butter
  • Once pan is hot, add shrimp and cook for 2-3 min, flipping half way. Set aside when shrimp are pink and cooked through
  • Once orzo is cooked, drain the hot water and add a little bit of cold water so the orzo does not overcook 
  • Transfer drained orzo back into the pot so you can assemble your sauce
  • Now add to orzo: 1 ½ tbsp olive oil , ½ tsp of salt, and shrimp
  • Next add the remaining ingredients to taste: black pepper, basil, marjoram, parsley, and mozzarella or parmesan cheese
  • Mix thoroughly and serve!
