Ingredients
- 2 cups rolled oats
- 1/2 cup all-purpose flour
- ¼ cup coconut oil (melted)
- 1/2 cup brown sugar
- ¼ cup honey
- 1 tbsp almond milk or regular milk
- 1 egg
- 1 tsp vanilla extract
- ½ tsp baking soda
- ½ tsp baking powder
- ½ cup raisins (if you don’t care for raisins, sub chocolate chips)
- ¼ tsp salt
- ½ tsp cinnamon
Instructions
- Preheat oven to 350 degrees F and line a baking sheet with parchment paper
- Mix together 1 egg, melted coconut oil, honey, milk, and vanilla extract
- In another bowl mix together, oats, flour, brown sugar, baking soda, baking powder, salt, raisins, and cinnamon
- Combine the dry ingredients with the wet ingredients and shape cookies into the size of a tablespoon and carefully place and flatten on baking sheet
- Bake cookies 10-12 minutes
- Makes one dozen cookies
