Mocha Chia Seed Pudding

Serves 2-3

Ingredients

  • ½ cup chia seeds
  • 1 tbsp flaxseed meal
  • 1 cup almond milk
  • ¼ cup plain greek yogurt
  • ¼ cup cacao powder
  • ½ tsp cinnamon
  • 2 tbsp honey
  • 1/2 tsp instant coffee
  • 1 tsp brown sugar or 1 tsp stevia
  • 1 tsp vanilla extract
  • ¼ cup chocolate chips

Instructions

  • Combine all ingredients in a mixing bowl and mix thoroughly
  • Divide into two mason jars and store in the fridge overnight or for 8 hours to allow for a thicker texture
  • Optional pudding toppings: blueberries, tbsp of peanut butter, coconut shreds, etc!
