Ingredients
- 3 eggs
- 1 1/2 cups almond flour
- ¼ cup coconut flour
- Juice from 1 lemon
- 1 tsp vanilla extract
- 2 tbsp almond milk
- 1 tbsp olive oil
- ½ tsp nutmeg
- ½ tsp cinnamon
- 1 tsp baking soda
- 2 tbsp poppy seeds
- 1/3 cup coconut sugar
- ¼ cup coconut oil
Ingredients for Icing
- 1 tbsp coconut oil
- 1 tbsp lemon juice
- 1 tbsp honey
- ½ tsp cinnamon
Instructions
- Preheat oven to 350 degrees F
- Prepare a loaf pan and line with parchment paper. Spray the parchment paper with nonstick spray
- In a bowl, combine all wet ingredients-eggs, lemon juice, vanilla extract, almond milk, olive oil, and coconut oil
- In another bowl mix together almond flour, coconut flour, baking soda, coconut sugar, nutmeg, cinnamon, and poppyseeds
- Mix the dry ingredients into the bowl of wet ingredients until well combined
- If you’d like you can add in additional toppings such as blueberries or nuts!
- Now make your icing: in a bowl, combine, 1 tbsp coconut oil, 1 tbsp lemon juice, 1 tbsp honey, and ½ tsp cinnamon and heat in the microwave for 10 seconds
- Pour the bread mixture into the loaf pan and half of the icing mixture over it
- Bake the bread in the oven for 40 minutes
- When the bread is done, let it cool for 10 minutes and carefully pour the rest of the icing mixture over it
- Let it cool for another 20 minutes and then it is ready to serve!
