Gluten Free Lemon Poppy Seed Bread

Ingredients

  • 3 eggs
  • 1 1/2 cups almond flour
  • ¼ cup coconut flour
  • Juice from 1 lemon
  • 1 tsp vanilla extract
  • 2 tbsp almond milk
  • 1 tbsp olive oil
  • ½ tsp nutmeg
  • ½ tsp cinnamon
  • 1 tsp baking soda
  • 2 tbsp poppy seeds
  • 1/3 cup coconut sugar
  • ¼ cup coconut oil

Ingredients for Icing

  • 1 tbsp coconut oil
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • ½ tsp cinnamon

Instructions

  • Preheat oven to 350 degrees F
  • Prepare a loaf pan and line with parchment paper. Spray the parchment paper with nonstick spray
  • In a bowl, combine all wet ingredients-eggs, lemon juice, vanilla extract, almond milk, olive oil, and coconut oil
  • In another bowl mix together almond flour, coconut flour, baking soda, coconut sugar, nutmeg, cinnamon, and poppyseeds
  • Mix the dry ingredients into the bowl of wet ingredients until well combined
  • If you’d like you can add in additional toppings such as blueberries or nuts!
  • Now make your icing: in a bowl, combine, 1 tbsp coconut oil, 1 tbsp lemon juice, 1 tbsp honey, and ½ tsp cinnamon and heat in the microwave for 10 seconds
  • Pour the bread mixture into the loaf pan and half of the icing mixture over it
  • Bake the bread in the oven for 40 minutes
  • When the bread is done, let it cool for 10 minutes and carefully pour the rest of the icing mixture over it
  • Let it cool for another 20 minutes and then it is ready to serve!
