Dairy Free Chicken Lemon Rice Soup

Ingredients

  • 1 and ¼-½ chicken breast (cut in 1 inch cubes)
  • 1 tbsp olive oil
  • ½ cup jasmine rice
  • ½ onion (chopped)
  • 2 garlic cloves (minced)
  • 1 cup green bean (chopped)
  • 2 large carrots (chopped)
  • ½ cup diced mushrooms
  • 3 cups chicken broth
  • 2 cups almond or non dairy milk
  • 1 cup water
  • ¼ tsp turmeric
  • ½ tsp salt or more depending on how salty you want it
  • ½ tsp pepper
  • ¼ tsp paprika
  • Dash of thyme
  • Juice from 1 lemon

Instructions

  • Add olive oil to pot on the stove on medium heat
  • Once pot is hot, add onions and chicken and season with salt and pepper
  • Cook for 10 minutes until chicken is brown
  • Add in all vegetables, chicken broth, water, and almond milk
  • Add in ½ cup rice, lemon juice, and spices
  • Bring to a simmer and cook for 45 minutes
  • Serve with crackers and side salad!
