Ingredients
- 1 and ¼-½ chicken breast (cut in 1 inch cubes)
- 1 tbsp olive oil
- ½ cup jasmine rice
- ½ onion (chopped)
- 2 garlic cloves (minced)
- 1 cup green bean (chopped)
- 2 large carrots (chopped)
- ½ cup diced mushrooms
- 3 cups chicken broth
- 2 cups almond or non dairy milk
- 1 cup water
- ¼ tsp turmeric
- ½ tsp salt or more depending on how salty you want it
- ½ tsp pepper
- ¼ tsp paprika
- Dash of thyme
- Juice from 1 lemon
Instructions
- Add olive oil to pot on the stove on medium heat
- Once pot is hot, add onions and chicken and season with salt and pepper
- Cook for 10 minutes until chicken is brown
- Add in all vegetables, chicken broth, water, and almond milk
- Add in ½ cup rice, lemon juice, and spices
- Bring to a simmer and cook for 45 minutes
- Serve with crackers and side salad!
