Creamy PB&J Overnight Oats

(Makes 2 servings)

Ingredients

  • 1 cup quick cooking or old fashioned rolled oats
  • 1 cup almond milk (or milk of your choice)
  • 1 tbsp chia seeds
  • 2 tbsp peanut or almond butter
  • 1/2 cup blueberries
  • 1/2 cup strawberries
  • 1 tbsp honey
  • Dash of cinnamon
  • Toppings of choice: Granola, spoonful of yogurt, sliced banana, nuts, cacao nibs, brown sugar, raisins, etc. Anything you have on hand!

Instructions

  • Pour 1 cup of oats in a mason jar
  • Pour in almond milk, chia seeds, honey, 1 tbsp peanut or almond butter, and cinnamon
  • Stir well and place in fridge overnight (at least 6 hours)
  • When ready to eat, pour overnight oats into two bowls and top with strawberries, blueberries, ½ tbsp peanut or almond butter (in each bowl), and any additional toppings listed above
  • Maybe you are rushing to get ready for work in the morning and need a “breakfast-to-go”
  • Simply add all toppings to mason jar and take oats with you and don’t forget a spoon!
