(Makes 2 servings)
Ingredients
- 1 cup quick cooking or old fashioned rolled oats
- 1 cup almond milk (or milk of your choice)
- 1 tbsp chia seeds
- 2 tbsp peanut or almond butter
- 1/2 cup blueberries
- 1/2 cup strawberries
- 1 tbsp honey
- Dash of cinnamon
- Toppings of choice: Granola, spoonful of yogurt, sliced banana, nuts, cacao nibs, brown sugar, raisins, etc. Anything you have on hand!
Instructions
- Pour 1 cup of oats in a mason jar
- Pour in almond milk, chia seeds, honey, 1 tbsp peanut or almond butter, and cinnamon
- Stir well and place in fridge overnight (at least 6 hours)
- When ready to eat, pour overnight oats into two bowls and top with strawberries, blueberries, ½ tbsp peanut or almond butter (in each bowl), and any additional toppings listed above
- Maybe you are rushing to get ready for work in the morning and need a “breakfast-to-go”
- Simply add all toppings to mason jar and take oats with you and don’t forget a spoon!
