Couscous and Hummus Salad

Ingredients

  • 1 cup cooked couscous
  • ¼ cup hummus
  • ¼ cup tahini
  • ¼ cup diced tomatoes
  • ¼ cup chopped cucumber
  • Juice from one lemon
  • 1/4 tsp salt
  • ½ tsp pepper
  • Cilantro to garnish

Instructions

  • Cook couscous according to package
  • Let couscous cool, then transfer to a serving bowl and mix in tomatoes and cucumbers
  • In a different bowl make your hummus mixture: combine hummus, tahini, juice from ½ of the lemon, salt, and pepper
  • Add the hummus mixture to the couscous bowl and mix well!
  • Sprinkle with fresh cilantro
  • You can serve this as a side dish as well as a main dish
  • When serving, I highly recommend adding more lemon juice from the other half of the lemon for more flavor
  • If you’d like this as a main dish and you want to keep it vegetarian, add black beans for added protein
  • If beans aren’t your thing, you can also add a different boost of protein such as shrimp or ground turkey to make it an entrée!
