Cheeseburger Skillet

Ingredients

  • 1 lb ground beef (can substitute ground turkey)
  • 1 tbsp olive oil
  • 1 chopped garlic clove
  • ½ diced onion
  • ½ cup cheddar or American cheese
  • 1 can diced tomatoes
  • 1 garlic clove (chopped)
  • ½ cup mushrooms (optional)
  • ¼ cup yellow mustard
  • ½ tsp pepper
  • 1/2 tsp salt
  • ½ of a sliced avocado (optional)
  • ¼ cup chopped pickles

Instructions

  • In a frying pan, add 1 tbsp olive oil and diced onions and place on medium heat
  • Once onions begin to brown add in mushrooms (if using) and garlic
  • In a cast iron skillet, add the ground beef and cook until meat begins to brown
  • Once the brown beef is cooked thoroughly, add the veggie mixture to the cast iron along with salt and pepper
  • Next add diced tomatoes and let simmer for 10 minutes on medium heat
  • When you see that the mixture is bubbling, add mustard and let cook for 5 minutes
  • Now add ½ cup of cheese and let simmer for 5 minutes more
  • Next add sliced avocado (if you want it!) and pickles and it is ready to serve!
  • You can serve the skillet many ways: by itself, on top of a salad, on top of pasta, with French fries or a baked potato. Many possibilities-Make it your own!
