Café Mocha Energy Bites

I love having a couple of these for a filling snack or dessert that includes healthy fats and protein!

Makes 12 bites

Ingredients

  • 1 ½ cup oats
  • ¼ cup peanut butter
  • ¼ cup chocolate chips
  • ¼ cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp almond milk or dairy milk
  • 1 tsp cacao powder
  • 1 tbsp chia seeds
  • 1 tsp instant coffee

Instructions

  • Soak 1 tsp of instant coffee in 1 tbsp almond milk until dissolved
  • Mix together remaining ingredients in a separate mixing bowl
  • Add your instant coffee/milk mixture to the mixing bowl
  • Form mixture into tablespoon size balls and transfer to plate
  • Place energy bites in the fridge to firm up for 30 minutes before eating
  • Store the bites in an airtight container in the fridge for 3-4 days or for 7 days in the freezer
