Broccoli Salad

Ingredients

  • 1 cup chopped broccoli
  • Half of a bell pepper (I used orange)
  • ½ of one cucumber (chopped)
  • ¼ cup finely chopped tomatoes
  • ½ tsp thyme
  • ½ tsp cilantro
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Juice from ½ lemon
  • 1 tbsp olive oil
  • 1 tbsp tahini
  • ½ tbsp maple syrup
  • ¼ cup raisins (craisins or dried cranberries work too!)

Instructions

  • Combine broccoli, bell pepper, cucumber, and tomatoes in a serving bowl
  • Next, make your sauce in another bowl: Mix together lemon juice, olive oil, maple syrup, tahini, and spices and whisk vigorously
  • Pour the sauce into the broccoli mixture and top with craisins or dried cranberries
