Ingredients
- 1 cup chopped broccoli
- Half of a bell pepper (I used orange)
- ½ of one cucumber (chopped)
- ¼ cup finely chopped tomatoes
- ½ tsp thyme
- ½ tsp cilantro
- ½ tsp salt
- ¼ tsp pepper
- ½ tsp garlic powder
- ½ tsp onion powder
- Juice from ½ lemon
- 1 tbsp olive oil
- 1 tbsp tahini
- ½ tbsp maple syrup
- ¼ cup raisins (craisins or dried cranberries work too!)
Instructions
- Combine broccoli, bell pepper, cucumber, and tomatoes in a serving bowl
- Next, make your sauce in another bowl: Mix together lemon juice, olive oil, maple syrup, tahini, and spices and whisk vigorously
- Pour the sauce into the broccoli mixture and top with craisins or dried cranberries
