Baked Chicken Pesto

Ingredients

  • 3 boneless chicken breasts
  • 1 cup mozzarella cheese
  • ¾ cup (apply more if needed) pesto sauce (store bought but feel free to make your own)
  • 2 small roma tomatoes (cut into thin slices)
  • Juice from 1 lemon
  • Salt and pepper

Instructions

  • Place your chicken breasts in a large Ziploc bag and marinate with pesto sauce, salt and pepper,  and then leave in fridge 30 minutes to 1 hour
  • Preheat oven to 400 degrees F
  • Once your chicken has finished marinating, place your chicken in a baking dish, making sure all of the marinade is evenly distributed on the chicken
  • Evenly spread your mozzarella cheese on the chicken breasts
  • Place 3 thin slices of tomato on top of your chicken
  • Squeeze lemon juice on top
  • Bake for 35-40 minutes until cooked all the way through
