Lemon Ginger Tahini Stir Fry

Ingredients

  • 1 lb ground turkey
  • 1/2 onion
  • 1 garlic clove
  • 1/2 cup of broccoli or green beans
  • 1/2 bell pepper (any color)
  • Juice from 1/2 lemon
  • Olive Oil
  • Soy sauce
  • Maple syrup
  • Ground ginger, salt, pepper, paprika, thyme, turmeric
  • Tahini
  • 1/4 cup of cashews or almonds
  • 1 cup white or brown rice

Instructions

  • Add onion, garlic, broccoli or green beans, and bell pepper to a skillet on high heat
  • Add ground meat in another pan and cook until brown
  • Add 1 tsp salt, 2 tsp black pepper, 2 tsp paprika
  • Make your rice according to package: 1 cup brown or white

Make your sauce!

  • Combine 1 tbsp ground ginger, 1 tsp turmeric, 1 tsp thyme, & 1/2 lemon juice
  • Next add 1 tbsp olive oil, 1/2-1 tbsp soy sauce (depending on how much of a salty taste you prefer), ½ tbsp maple syrup, & 1 tbsp tahini
  • Add ¼ cup of cashews or almonds
  • When meat is finished cooking, set aside and drain any liquid
  • Add your tahini sauce and serve with rice!
