Ingredients
- 3 boneless chicken breasts
- 1 cup mozzarella cheese
- ¾ cup (apply more if needed) pesto sauce (store bought but feel free to make your own)
- 2 small roma tomatoes (cut into thin slices)
- Juice from 1 lemon
- Salt and pepper
Instructions
- Place your chicken breasts in a large Ziploc bag and marinate with pesto sauce, salt and pepper, and then leave in fridge 30 minutes to 1 hour
- Preheat oven to 400 degrees F
- Once your chicken has finished marinating, place your chicken in a baking dish, making sure all of the marinade is evenly distributed on the chicken
- Evenly spread your mozzarella cheese on the chicken breasts
- Place 3 thin slices of tomato on top of your chicken
- Squeeze lemon juice on top
- Bake for 35-40 minutes until cooked all the way through
