Individual sized Pesto Pasta salad cups

(Serves 9-two cups per person)

Ingredients

  • 1 box any pasta of your choice (I used penne, but baby shells, bowtie, or rotini also work)
  • ¾ cup pesto sauce (I used store bought but feel free to make your own)
  • 1 lemon
  • ½ red bell pepper
  • ½ cup chopped broccoli
  • ½ cup mozzarella cheese
  • ¼ cup blueberries
  • ¼ cup strawberries
  • Salt, pepper, paprika to taste
  • 8 oz plastic cups

Instructions

  • Cook noodles according to package
  • Once noodles are done drain and let them cool
  • Cut up veggies and set aside
  • Once noodles are cooled, mix with pesto sauce and store in fridge up to 1 hour
  • Then mix veggies, juice from 1 lemon, cheese, fruit and spices with the pasta
  • Divide into 8 oz plastic cups and top with thin layer of foil and store in fridge until ready to serve
