Ingredients
- 1 cup cooked couscous
- ¼ cup hummus
- ¼ cup tahini
- ¼ cup diced tomatoes
- ¼ cup chopped cucumber
- Juice from one lemon
- 1/4 tsp salt
- ½ tsp pepper
- Cilantro to garnish
Instructions
- Cook couscous according to package
- Let couscous cool, then transfer to a serving bowl and mix in tomatoes and cucumbers
- In a different bowl make your hummus mixture: combine hummus, tahini, juice from ½ of the lemon, salt, and pepper
- Add the hummus mixture to the couscous bowl and mix well!
- Sprinkle with fresh cilantro
- You can serve this as a side dish as well as a main dish
- When serving, I highly recommend adding more lemon juice from the other half of the lemon for more flavor
- If you’d like this as a main dish and you want to keep it vegetarian, add black beans for added protein
- If beans aren’t your thing, you can also add a different boost of protein such as shrimp or ground turkey to make it an entrée!
