- 1 lb ground beef (or ground turkey)
- 1 tbsp olive oil
- 1 tsp apple cider vinegar
- 1 cup rice (can substitute cauliflower rice if you are low carb)
- 1 cup spinach
- 1 ½ cup marinara sauce
- ½ onion diced
- 1 garlic clove
- 1/2 cup green beans
- 1/2 cup cauliflower
- 1 tsp pepper
- 1 tsp salt
- ½ tsp cumin
- 1 tsp cilantro
Instructions
- Heat 1 tbsp olive oil in a cast iron skillet and add onion
- Once the onions begin to brown add the ground beef and garlic cook for 10 minutes
- Add spinach, green beans, cauliflower, apple cider vinegar, marinara sauce, and spices and cook for 20 minutes
- In a separate pot, make 1 cup rice according to package
- When the rice is cooked, transfer to the cast iron (with beef and veggies) and mix well
- Ready to serve! (Makes 4 portions)
