Chocolate Peppermint Cookies Two Ways!

Grain Free version and All-purpose flour version

Ingredients for All-purpose flour version

  • 1 and ½ cup all-purpose flour
  • ½ cup cocoa powder
  • ½ cup butter (1 stick)
  • ½ cup honey
  • 1 egg
  • ½ cup brown sugar (or coconut sugar for natural sweetener)
  • ½ tsp vanilla extract
  • ¼ tsp peppermint extract
  • ¼ cup chocolate chips
  • ¼ cup x-mas or holiday themed M&M’S
  • ¼ tsp baking powder
  • ¼ tsp baking soda

Ingredients for Grain Free version

  • 1 & ½ cups almond flour
  • ¼ cup coconut flour
  • ½ cup cocoa powder
  • ½ cup butter (1 stick)
  • ½ cup honey
  • 1 egg
  • ½ cup coconut sugar
  • ½ tsp vanilla extract
  • ¼ tsp peppermint extract
  • ¼ cup chocolate chips
  • ¼ cup x-mas or holiday themed M&M’s
  • ¼ tsp baking powder
  • ¼ tsp baking soda

Instructions for both All-purpose flour version and Grain Free version

  • In a bowl combine egg, honey, vanilla extract, peppermint extract, and ½ cup melted (and cooled) butter
  • Now add the dry ingredients: flour, cocoa powder, brown or coconut sugar, baking powder and soda, ¼ cup of chocolate chips and ¼ cup M&M’s
  • Prepare a cookie sheet with parchment paper and scoop out tablespoon sized cookie dough
  • Bake in oven at 350 for 15 minutes
