Honey Mustard Salmon

Serves 2-3

Ingredients

  • 1 lb salmon
  • ½ juice from a lemon
  • 1 tbsp olive oil
  • 1/4 cup honey
  • 1 tsp apple cider vinegar
  • ¼ cup Dijon mustard
  • ½ tsp pepper
  • ¼ tsp salt
  • ¼ tsp paprika

Instructions

  • Preheat oven to 400 degrees F and line a baking sheet with parchment paper
  • Make your honey mustard sauce: In a small bowl combine lemon juice, olive oil, honey, apple cider vinegar, Dijon mustard, and spices and stir well
  • Brush the marinade on the salmon generously
  • Place in the oven for 15 minutes or until the salmon reaches 145 degrees F
  • Serve with side salad and rice!
