Pumpkin Oatmeal Squares

Ingredients

  • 2 and ¼ cup rolled oats
  • ¾ cup almond milk
  • ¼ cup pumpkin puree
  • 1 tsp vanilla extract
  • ¼ cup maple syrup
  • 1 tbsp honey
  • 1 banana (mashed)
  • 1 tsp brown sugar
  • 1 egg
  • 1 tsp baking powder
  • 1/2 cup chocolate chips
  • ½ tsp pumpkin pie spice
  • ½ tsp cinnamon
  • Optional toppings: sliced banana, berries, peanut butter, yogurt

Instructions

  • Preheat oven to 350 degrees F
  • In a mixing bowl combine almond milk, pumpkin, maple syrup, vanilla extract, honey, mashed banana, 1 egg and mix well
  • Now add your dry ingredients to the mix: rolled oats, brown sugar, baking powder, cinnamon, pumpkin pie spice, and chocolate chips and stir thoroughly
  • Prepare an 8 x 8 baking or cake pan and spray with non-stick spray or line with parchment paper and pour mixture into bowl
  • Bake for 30-32 minutes and let cool before serving
  • Slice into 6 squares and add any additional toppings!
  • You can have this as breakfast, dessert, or a snack and can be enjoyed cold or hot (warm up in the microwave)
