Oatmeal Raisin Cookies

Ingredients

  • 2 cups rolled oats
  • 1/2 cup all-purpose flour
  • ¼ cup coconut oil (melted)
  • 1/2 cup brown sugar
  • ¼ cup honey
  • 1 tbsp almond milk or regular milk
  • 1 egg
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ cup raisins (if you don’t care for raisins, sub chocolate chips)
  • ¼ tsp salt
  • ½ tsp cinnamon

Instructions

  • Preheat oven to 350 degrees F and line a baking sheet with parchment paper
  • Mix together 1 egg, melted coconut oil, honey, milk, and vanilla extract
  • In another bowl mix together, oats, flour, brown sugar, baking soda, baking powder, salt, raisins, and cinnamon
  • Combine the dry ingredients with the wet ingredients and shape cookies into the size of a tablespoon and carefully place and flatten on baking sheet
  • Bake cookies 10-12 minutes
  • Makes one dozen cookies
