Ingredients for Salad
- 1 cup quinoa
- 1/2 bell pepper
- 1/3 cup mushrooms (chopped)
- 1/4 cup fresh blueberries
- 1/4 cup peanuts or any nut of choice
- ¼ cup dried fruit (I used a mix of dried cranberries and coconut)
Ingredients for Honey Mustard Dressing
- Juice from ½ lemon
- 1 ½ tbsp yellow mustard
- ¼ cup honey
- 1 tbsp Dijon mustard
- ½ tsp of salt, pepper, and oregano
Instructions for Salad
- Cook 1 cup of quinoa on the stove according to package
- Boil a ½ cup of water in a separate pan and add the bell pepper and mushrooms
- Once veggies are soft and quinoa is cooked, combine them in a medium sized serving bowl and add blueberries, peanuts, and dried fruit
- Combine the ingredients for the dressing in a small bowl and whisk
- Pour the dressing in the quinoa mixture and mix throughout
- Refrigerate for 30 minutes prior to serving
