I love having a couple of these for a filling snack or dessert that includes healthy fats and protein!
Makes 12 bites
Ingredients
- 1 ½ cup oats
- ¼ cup peanut butter
- ¼ cup chocolate chips
- ¼ cup honey or maple syrup
- 1 tsp vanilla extract
- 1 tbsp almond milk or dairy milk
- 1 tsp cacao powder
- 1 tbsp chia seeds
- 1 tsp instant coffee
Instructions
- Soak 1 tsp of instant coffee in 1 tbsp almond milk until dissolved
- Mix together remaining ingredients in a separate mixing bowl
- Add your instant coffee/milk mixture to the mixing bowl
- Form mixture into tablespoon size balls and transfer to plate
- Place energy bites in the fridge to firm up for 30 minutes before eating
- Store the bites in an airtight container in the fridge for 3-4 days or for 7 days in the freezer
