Ingredients
- 4 eggs
- 1 can diced tomatoes
- ¼ cup mushrooms
- Olive oil
- ½ orange bell pepper
- ½ onion
- ¼ tsp salt
- ¼ tsp pepper
- ¼ tsp thyme
- ¼ tsp cilantro
- ¼ tsp cumin
- 1 garlic clove
Instructions
- Preheat your oven to 350 degrees F
- Heat a cast iron skillet with olive oil and add diced onions
- After onions start to brown, add your bell pepper, mushrooms, and garlic
- Add your tomatoes and spices and simmer on high heat
- When your sauce reaches a boil, reduce to medium heat and create four small circles inside the pan so that you have space for each egg
- Crack each egg into its individual hole in the pan and turn the heat to a low simmer
- Let simmer for 7 minutes and then place in oven for 5-7 minutes depending on how well done you prefer your eggs
