Ingredients
- 1 tbsp olive oil
- 3/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp thyme
- 1/2 tsp garam masala
- 1 tsp cumin
- 1 tsp curry powder
- 1/4 tsp paprika
- 1/2 tsp curry paste or more depending on how spicy you want it!
- 1/4 tsp ginger
- 1/2-1 cup almond milk
- 1 can chickpeas
- 1 garlic clove
- 1 can diced tomatoes
- 1/2 an onion
- Vegetables! Any kind you like works! (I used broccoli, mushrooms, and peas-you can use 1/3 cup each vegetable)
- 1 potato diced (sweet or russet works)
Instructions
- Heat olive oil in a pot and add diced onions
- Once your onions become translucent, add your vegetables, potato, and garlic and ½-1 cup of water and set on high heat
- Once your vegetables start boiling, reduce to a simmer
- Next add chickpeas and diced tomatoes
- Add almond milk, curry paste, and spices
- Let simmer around 45 minutes and serve with quinoa, white or brown rice, and/or naan bread for dipping!
- If you are looking for a lower carb option, serve over cauliflower rice with a lower carb pita bread!
