Sweet Teriyaki Chicken Tenders

Ingredients

  • 1 lb chicken tenders
  • ½ cup almond flour
  • 2 eggs
  • 1 tbsp soy sauce (you can use coconut aminos for a gluten free, lower sodium option)
  • 2 tbsp honey  
  • 1 tbsp almond milk
  • 1 tbsp tahini
  • ½ tsp apple cider vinegar
  • Pepper, garlic powder, ground ginger

Instructions

  • Preheat your oven to 400 F and prepare a greased baking dish
  • Whisk two eggs in a small bowl
  • Combine almond flour, 1 tsp garlic powder, and 1 tsp pepper in another bowl
  • Dip your defrosted chicken tenders in the egg wash and then dip in flour mixture, directly setting the tenders in the baking dish  

Make your sauce

  • Combine soy sauce, apple cider vinegar, honey, almond milk, tahini, and ground ginger in a bowl
  • Place chicken in oven for 20-25 minutes
  • Tip: (check at 20 minutes so they don’t burn or become dry-165 F if checking with food thermometer)
  • Pour teriyaki sauce over chicken tenders and serve

  1. Honestly this recipe is one of the best things I’ve ever made in my life and I am close to the magical age of 60!! You will definitely want to double this recipe so there are leftovers. The chicken was so tender, but crispy on the outside and the teriyaki flavor was absolutely delicious and perfectly spiced. Can’t wait for dinner tonight 🙂
